Mr digandweed and I have been away. We travelled west to the cities of Bristol and Bath, cities I know well from my childhood and teenage years.
Bristol is a bustling, cosmopolitan, energetic city; Bath, an elegant, stylish spa, famous for its Roman baths and beautiful architecture.
We spent last Saturday in Bath and were blessed with the most beautiful late summer weather for a walk along the Kennet and Avon canal and River Avon.
We even spotted some characters who looked like they had escaped from a Jane Austen novel.
Back home in the Fens and shopping for a few groceries in our little town, I found these beautiful, English grown aubergines in our local greengrocer's and had to buy some.
Deciding what to do with them, I came across a Jamie Oliver recipe for aubergine lasagne. I adapted the recipe slightly, using 2x125g packets of mozzarella in place of the cheddar cheese.
It was a quick,easy and delicious recipe, especially with some toasted sourdough and salad on the side.
A week on from our long weekend away and the weather is beautifully sunny again today in our corner of the fens.
